Berry Buttermilk Skillet Cake!

We usually make a Strawberry Skillet Cake because it's easy, festive and matches my red skillet.  This week though, I only had a little bit of strawberries and extras of blueberries and blackberries add some brown sugar and this is entirely different!  Moist and delicious even with coffee for breakfast!  I'll take any excuse to eat cake!



Ingredients - 

Butter - grassfed 8oz
Brown Sugar - 5 oz
Eggs - pasture raised - 2
Oat Flour - 8 oz
Baking Powder - 1 teas
Cardamon - 1 teas
Buttermilk - 4 oz

Coconut oil - 1 tablespoon for skillet bottom

Berries - strawberry halves, blackberries, blueberries

Set oven to preheat at 350 degrees
Mix dry ingredients in small bowl.
Mix butter and sugar then add-in eggs in mixing bowl and stir.
Add-in dry ingredients then immediately add-in buttermilk.
Mix well.
Coat skillet with coconut oil.
Pour in cake batter.
Top with strawberry halves, blackberries and blueberries.  This is a great job for the kids!
Bake in oven at 350 degrees about 25 minutes or until done.
Cool and enjoy!

My Notes:

Let the kids help with this one - Stirring, washing the berries and cutting the strawberries in half with a small butter knife (age appropriate of course)
Placing the berries on the cake is loads of fun!

Berries are extremely high on pesticides. We always choose organic.  Right now they're in season and usually on sale!
